Oyster Mushroom and Penne Pasta Recipe:

Ingredients:

  • 1 lb penne pasta
  • 1 lb fresh Oyster Mushrooms
  • 3 cloves garlic, minced
  • 1/2 cup white wine
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions:

  1. Cook the penne pasta according to the package directions until al dente.

  2. While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  3. Add the Oyster Mushrooms to the skillet and sauté for 5-7 minutes until they are tender and lightly browned.

  4. Pour in the white wine and let it cook for a couple of minutes until it has reduced by half.

  5. Add the heavy cream to the skillet and stir to combine with the mushrooms. Let it simmer for a couple of minutes until it has thickened slightly.

  6. Drain the cooked penne pasta and add it to the skillet with the mushroom sauce. Toss everything together until the pasta is coated in the sauce.

  7. Add the grated parmesan cheese to the skillet and stir until it has melted and combined with the sauce.

  8. Season with salt and pepper to taste.
